Hello beautiful creatures. Today’s recipe is a pumpkin pancake. Here in the Netherlands, at least where I live, are pumpkin not quite popular for food. But they’re quite popular for craving. But I know American and British people are quite fond of pumpkin. So today I’m going to show you, the recipe for pumpkin pancakes. Let’s do this!
This recipe akes about 8 medium pancakes.
The prep time is around 10 minutes.
The cook time is around 5 minutes.
Things you need to have:
2 large eggs
6 ounces Chobani apple cinnamon Greek yogurt or plain Greek yogurt
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup oat flour
1/2 cup brown rice flour
1/2 teaspoon guar gum
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon salt
Things you need to do:
Heat a griddle or large frying pan over medium heat.
In a medium mixing bowl, stir the yogurt and eggs until combined; stir in the pumpkin.
In a separate small mixing bowl, stir the flours, pumpkin pie spice, baking soda, and salt. Add the dry ingredients to the yogurt mixture, stirring until just mixed (the batter will be thick).
Spray the griddle with nonstick cooking spray. Use an ice cream scoop or large spoon to spread the batter onto the griddle (since the batter is thick, you will need to spread it out a bit to desired thickness). Cook the pancakes about 2 to 3 minutes on each side or until cooked. Serve with Greek yogurt, honey, maple syrup, or butter and cinnamon sugar (or all of the above!)
